Tasting Notes
This wine opens with intense aromas of citrus blossom, white peach, and a touch of honeysuckle. The palate reveals flavors of green apple, pear, and flinty minerality, supported by a vibrant acidity and a creamy mid-palate. The finish is long and elegant, with lingering notes of almond and fresh herbs.
Terroir and Vinification
Vineyard
Vines are planted on south-facing slopes in Auxey-Duresses, benefiting from optimal sun exposure and poor, stony soils that impart minerality and depth. The vines average 25 years of age, ensuring concentrated fruit and nuanced complexity.
Winemaking
Grapes are hand-harvested and gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks, followed by aging on fine lees for 10 months. A small percentage is matured in seasoned oak barrels to add texture without overpowering the wine’s freshness.
Food Pairing
Delightful with oysters, grilled scallops, sushi, or creamy risottos. It also pairs beautifully with soft goat cheeses, roasted chicken, or lightly spiced Asian cuisine.
Serving Suggestions
Chill to 10–12°C and serve in a tulip-shaped glass to concentrate the wine’s aromatic profile. Decanting is not necessary but can enhance the wine’s complexity and aeration.
