Santenay AOP Red Wine - Burgundy

Maison Vincent Girardin, established in 1982 with 2 hectares, has grown its business over the years, adding a négociant activity in 1990, which it has managed with skill and expertise. Acquired in 2012 by Compagnie des Vins d'Autrefois, Maison Girardin is now headed by Eric Germain, Technical Director and winemaker since 2002, who remains committed to the same path, upholding its high-end winemaking ethics.

Winemaking
The grapes are harvested by hand, followed by manual sorting and destemming. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks using indigenous yeasts. Malolactic fermentation and aging in barrels, 30% of which are new, last for 15 months. The barrels are blended one month before bottling, which is done according to the lunar calendar.

Tasting Notes
A nose of small red fruits (raspberry, redcurrant, blueberry), spices (pepper, cinnamon), and violet. The palate is silky, with fine tannins supported by well-integrated freshness, and a lovely succession of fruity aromas.

Serving Suggestion
Serve at 14°C with roast veal, duck with green peppercorn sauce, coq au vin, small game, or cheeses.
