Maison Champy is one of Burgundy's oldest wine houses, founded in 1720 in Beaune. Since 2005, it has converted to biodynamic farming and will obtain organic certification in 2023. Winemaking
The grapes are harvested by hand. After cold maceration, fermentation takes place using natural yeasts, and maceration lasts approximately three weeks. Vinification is traditional, with aging for one year in oak barrels, 25% of which are new.
