Red Wine Pernand-Vergelesses 1er Cru AOP - Burgundy

Maison Champy is one of Burgundy's oldest wine houses, founded in 1720 in Beaune. Since 2005, it has converted to biodynamic farming and will obtain organic certification in 2023. This Premier Cru comes from a very hilly vineyard covering the slopes of the hills of Aloxe-Corton and Savigny-lès-Beaune, in the far north of the Côte de Beaune.

Winemaking
The grapes are harvested by hand. After cold maceration, fermentation takes place using natural yeasts, and maceration lasts approximately three weeks. Vinification is traditional, with aging for one year in oak barrels, 25% of which are new.

Tasting Notes
A beautiful, deep garnet color. The nose is complex, with aromas of red and black fruits and a touch of candied fruit. The attack on the palate is intense, with a density that combines tannic firmness, freshness, and a powerful structure.

Serving suggestion: This elegant Pinot Noir calls for refined cuisine such as scallop carpaccio, langoustine tempura with orange butter, monkfish tagine with spices, roasted turbot or John Dory… It also pairs well with cheeses like Brillat-Savarin, Chaource, and Vacherin.
