Granite Soils & Slope

The La Mouline parcels sit on steep, south-facing granite slopes, providing optimal sun exposure and drainage. The mineral-rich schist and decomposed granite lend a striking backbone of flint and graphite to the wine’s core.

Climatic Influence

A warm continental climate, tempered by cool nighttime breezes, promotes ideal phenolic ripeness while preserving freshness and aromatic lift. Diurnal temperature swings concentrate flavors and maintain balance.

Winemaking

Hand-harvested fruit undergoes 100% destemming before a cold soak to extract color and aroma precursors. Fermentation takes place in open-top vats with indigenous yeasts, followed by 18–24 months of élevage in 100% new French oak barrels. Subtle racking and gentle fining ensure finesse without stripping character.

Tasting Profile

Appearance: Deep ruby-black with purple edges.
Aroma: Intense notes of blackberry, black cherry, violets, smoked bacon, graphite, and white pepper.
Palate: Concentrated fruit core, silky tannins, vibrant acidity, and layers of black plum, mocha, licorice, and mineral dust.
Finish: Long, expansive, with a peppery lift and tobacco undertones.
