The Savary family is based in Maligny, in the heart of the Chablis vineyards. Their vineyard comprises 20 hectares of vines cultivated using sustainable farming practices (HVE 3 and Terra Vitis certifications). It brings together two of the oldest winemaking families in the Chablis region. Francine Bachelier, originally from Villy, contributed land and a history spanning over 200 years. Olivier Savary, with his background in winemaking and oenology, brings his expertise.
Winemaking
Mechanical harvesting. The grapes are received on a sorting table, then gravity-fed into the presses. Yeast is added to initiate the 12-day alcoholic fermentation, followed by malolactic fermentation, which lasts approximately two months. The wine is aged in stainless steel tanks.

Alcohol: 12.5%
Tasting notes: This wine has a pale color with golden highlights. Its nose offers a bouquet of white flowers and citrus, flint, and beeswax. It is fresh and dry, with a characteristic mineral finish.
Serving suggestions: It pairs perfectly with snails, Asian cuisine, or seafood. Serve at around 10°C (50°F).
